You’ll learn the secrets of our 48-hour cold-fermented dough, mastering the hand-stretching technique that creates a thin, airy base and that iconic, blistered cornicione (crust). We bring the 900-degree stone ovens to your backyard, teaching you how to manage the flame to achieve the legendary "leopard spotting" in under 90 seconds. It’s a high-energy, hands-on journey from raw dough to a smoky, stone-baked masterpiece.
